Macaroni and cheese is total comfort food and this easy recipe will have you kicking your box habit and always making your macaroni and cheese from scratch. To start get a large pot of boiling water going on the stove and we’re gonna shred some cheese. You want to shred 8 ounces of sharp cheddar cheese and I like to use sharp because it has way more flavor. You can actually do a combination of any cheese you want really that melts well but cheddar is the classic option. So I’ll shred the entire 8 ounce brick. You should end up with a nice big pile of cheese. We’ll set that cheese aside for a second and head on over to the stove.
I have my boiling water going in the back to cook my pasta and over here I’m gonna make my sauce and this is where we’re gonna add all of the pasta in and cook everything up so you want to make sure it’s nice and big. The water is not quite boiling yet so I’m gonna start the sauce by melting 1/2 cup of salted butter over medium-low heat. Over in this pot we’re gonna boil 1 pound of dried elbow noodles which will take about 7 minutes.
Now there are recipes out there that have you cook the pasta directly in the sauce however I’m not a huge fan because then all of the starchiness ends up in the sauce and it’s just better to cook it separately Back over to our sauce we can add in 1/2 a cup of all-purpose flour and then we’re gonna add in our spices. So you’ll need 1 1/2 teaspoons of ground mustard 1 1/2 teaspoons of onion powder, 1 teaspoon of salt and last 1/2 teaspoon of white pepper.
Then we’re gonna whisk this into the butter. This mixture is called a roux and you want to increase the temperature to medium high and cook this for one to two minutes. Then we’re gonna pour in 3 cups of milk and I like to use 2% for this. Then we’re gonna bring this to a simmer. You don’t want this milk mixture to boil. You just want the bubbles to start to form for a simmer and then gonna turn off the heat and then add in all of our shredded cheddar cheese and stir it in until it’s nice and melty. Now at this point our pasta should be just about done so we’re gonna take this and then drain this in the sink and then we’ll pour the pasta directly into our cheese sauce and then stir it all together and then that’s it! You have yourself an easy delicious cheesy macaroni and cheese that the whole family will love.
